The risk is there for any uncovered jar/tank. However, my observation is a betta can only jump if he/she has short fins which makes for a lighter body weight. Fat fishes are also unable to jump. Those known to jump as I observed are:
1. female
2. Short finned plakats
3. Wild bettas. I saw B. Imbellis leaping out of a jar although there was a 3-inch gap.
As to why or what causes them to jump, I ll let the others chip in their comments.
